Heart shaped shortbread cookies!

These cookies are so yummy and easy to make, the kids will love getting involved! They were perfect for Mother’s Day this year and for any special occasion!

2.5 cups plain flour
2 tsp baking powder
1 cup almond meal
50g vanillan sugar
50g icing sugar
More icing sugar to coat
250g unsalted butter, room temperature

Using an electric mixer, mix butter and sugar until it’s light and fluffy.
Add all the ingredients to a bowl and mix together with your hands to form a ball. Divide the ball into four parts. On a chopping board, use a rolling pin to flatten each part until approximately 4 mm thick. Using a heart mould, cut out biscuits shapes using baking paper between the dough and rolling pin. Place hearts on a lined baking tray and bake for 10 minutes or until lightly golden.
