We love this meat free dish! It’s full of flavour, nutrients and very easy to make! Perfect for the whole family!
2x 400g canned butter beans, drained and rinsed
2 cloves of garlic, finely chopped
1 large onion, finely chopped
1 heaped tsp dried oregano
2 tbsp fresh parsley
1 tbsp extra virgin olive oil
1 large carrot, cut into thin discs
30g baby spinach leaves
2x 400g organic diced tomatoes
1/2 cup water
1 tbsp tomato paste
Pre-heat oven to 180 degrees.
Add olive oil, onions, garlic and oregano to a pan and fry until onion and garlic is fragrant and transparent. Then add carrot, 1 tbsp of parsley, beans, tomato paste, diced tomatoes and water and cook for 5 or so minutes or until bubbling. Transfer to an oven proof baking dish and mix the spinach in. Cover with foil and cook for 40 minutes.
Top baking dish with feta and the rest of the parsley and serve with Pita or Turkish bread, rice or on its own!
